Linzer cookies are traditional sandwich biscuits made by layering fruity apricot jam between two buttery shortbread pastries, topped with chopped walnuts.

Each pack contains two Linzer. They are perfect for parties and special occasions, but can also be enjoyed as part of a gourmet afternoon tea or an indulgent snack.

How is it made?

The recipe for Linzer cookies starts with a tender shortbread-style dough. The dough is rolled out and cut into crinkle-edged circles, with one cookie from each pair featuring a smaller cut-out in the centre to create the signature window.

The cookies are baked until golden and lightly crisp. Once cooled, fragrant apricot jam is spread on the bottom cookie, and the windowed top cookie is placed over the jam, forming an irresistible biscuit sandwich.

Coarsely chopped walnuts are added on top for a stylish and crunchy finishing touch.

The classic Linzer recipe, along with the indulgent Sachertorte, also served as inspiration for Ischler cookies, which are Linzer biscuits covered in moreish dark chocolate.
